Sesame tofu is a cornerstone of Japanese shojin cuisine, traditionally crafted from finely ground white sesame, starch, and water. Despite its name, it contains no soybeans. The mixture is gently heated and stirred over low heat, then cooled to set, resulting in a smooth texture with subtle elasticity and a deep, lingering sesame aroma.

Its roots lie in temple kitchens, where monks sought to create richness and depth without relying on animal products. Over centuries, this technique was refined and eventually embraced by kaiseki cuisine, where sesame tofu serves multiple roles: as an opening dish to awaken the palate, within wanmori to showcase textural finesse, lightly grilled as yaki goma dofu, served simply chilled with a touch of wasabi and soy sauce, or sweetened with kuromitsu as a closing note.
