Sakura Flavored Miwa Somen Noodles
These somen noodles are delicately flavored with edible cherry blossoms and cherry leaves, kneaded in as powders and paste to create a subtle aroma and taste reminiscent of sakura mochi. They are made using an original blend of premium-grade wheat flour, and produced through the traditional tenobe (hand-stretched) method, which requires time and careful craftsmanship.
Tenobe is a process of repeatedly stretching the dough by hand. During production, the noodles are braided and wound in a process known as kakeba and kakemaki, then gradually stretched thinner while being rested and matured. By stretching the noodles while braided in a spiral form, the finished somen develops a firm yet elastic texture with a smooth, clean finish on the palate.
