Premium Katsuobushi Flakes (Honbushi Hana)
PREMIUM KATSUOBUSHI FLAKES (HONBUSHI HANA) are delicate bonito flakes shaved from honkarebushi, the highest grade of traditionally fermented and aged dried bonito. These flakes are not simply a seasoning. In Japanese cuisine, they form the foundation of dashi, the broth that defines the structure and depth of many dishes. When infused into kombu stock, they release a clean aroma and layered umami that support ingredients without overwhelming them.
Produced in Kyoto by a specialist in dashi ingredients with a history dating back to 1877, the honkarebushi blocks are carefully shaved into light, fragrant flakes designed to produce a clear and elegant broth. For professional kitchens, this ingredient provides a dependable base for ichiban dashi, the first and most refined extraction used in Japanese cooking. It is particularly suited for preparations where clarity and balance are essential, including osuimono (clear soups), nimono (simmered dishes), and refined applications in sushi and kaiseki-style cuisine.
Kyoto Kitchen presents this ingredient as a fundamental tool for chefs who wish to work with authentic Japanese dashi and understand the role it plays in shaping the structure and depth of Japanese cuisine.
