Manganji chili peppers are one of Kyoto’s traditional vegetables, known for their large size and natural sweetness, and are often referred to as the “king of Kyo vegetables.” They combine thick, juicy flesh inherited from bell peppers with the mild aroma and few seeds characteristic of Fushimi chili peppers. Their most distinctive feature is that they contain almost no heat, making them enjoyable for all ages. Today, they are widely recognized as a representative summer vegetable of Kyoto.

Manganji chili peppers are best prepared using simple methods that highlight their natural flavor. One of the most classic preparations is yaki manganji, where the peppers are grilled whole until lightly charred, then finished with bonito flakes and soy sauce or ponzu. The seeds are tender and traditionally left intact. In Kyoto home cooking, they are commonly simmered with chirimen jako in a light dashi based broth, a standard obanzai dish that balances sweetness and texture. Their thick flesh also makes them suitable for stuffed preparations or tempura, where the contrast between crisp batter and juicy interior brings out their appeal.

By offering Manganji chili peppers in a frozen format, Kyoto Kitchen enables professional kitchens to express the flavors of Kyoto with consistent quality, regardless of season.
