Frozen Bamboo Shoots (Whole With Tips)
Winter Bamboo Shoots are a key item in Kyoto Kitchen’s premium ingredient lineup. Harvested underground in the coldest months before sunlight reaches them, they stay small yet concentrated in natural sweetness and aroma, with almost no bitterness and a crisp, tender texture. Our shoots come from Fujian Province in China, known for red clay soil and a climate suited for bamboo. They are brought to the processing facility within minutes of harvest, handled on the same day, and quickly cooled to preserve their delicate flavor. Although only about twenty five percent of each shoot is edible, we select only pieces that meet professional standards.
Winter bamboo shoots suit many Japanese dishes. For Wakame and Bamboo Shoot Nimono, simmer the thawed shoots gently in dashi for ten to fifteen minutes so the flavor absorbs fully. For tempura, thaw and give them a brief blanch, dry thoroughly, then coat with batter to highlight their light sweetness and aroma. They are also excellent in soups, stir-fries, and takikomi gohan, adding a clean and refined character to both traditional and modern preparations.
