Yuba is a food that symbolizes Japan’s unique culinary culture. It is made by carefully lifting the thin skin that forms on the surface of heated soy milk. Known for its delicate texture and refined flavor, yuba has developed over centuries, particularly in Kyoto.

In shojin cuisine, yuba was refined as a way to create satisfying dishes without using meat or fish. It has long been valued as a source of protein that allows the natural umami of soybeans to be enjoyed. Kyoto cuisine places importance on respecting ingredients and avoiding unnecessary manipulation, which brings out yuba’s gentle sweetness and aroma.

Fresh yuba sheets are the most basic and traditional form. After thawing, they can be served simply with wasabi and soy sauce or with dashi, highlighting their soft mouthfeel and natural sweetness. They are also suitable for soups and dressed dishes.
