"Chimaki Fu" Gluten Cake
Chimaki-Fu represents Kyoto Kitchen’s invitation to experience the poetic spirit of washoku. “Fu”, or wheat gluten, has long been a quiet but essential element of Japanese cuisine, and this sweet variation has been enjoyed for centuries in Kyoto’s kaiseki traditions. Its texture is uniquely soft and elastic—neither mochi nor tofu—expressing a character entirely its own.
Each piece is wrapped in fragrant bamboo leaves and tied with natural rush grass. When the string is untied and the leaf is opened, a gentle aroma rises before the smooth, resilient texture reveals itself on the palate.
In Kyoto, chimaki also carries symbolic meaning as a charm of protection and purification, especially during seasonal events such as Gion Matsuri. The Chimaki-Fu we introduce to America carries this spirit forward. It is vegan, high in plant protein, and unlike anything currently found in American cuisine, offering chefs a new texture and a new cultural story to explore.
